Yuzu Juice Recipes:

Yuzu Shot (non-alcholic)

Ingredients:

2 oz Yuzu Juice

2 oz mineral water*

*Replace with Vodka, Tequila, Sake or Shochu for an alcohic drink..

Steps:

Add all ingredients, mix well then chill.

*This shot is great before the meal or after the meal for
refreshment.

Yuzu Sauce with Yogurt

Ingredients:

2 oz Yuzu Juice

8 oz water

2 table spoon, honey

0.2 oz ( 8 grams) Unflavored Gelatin ( 1 bag of Knox Gelatin)

Steps:

1. Put Yuzu Juice, honey, sugar in the pot. Heated in warm
temperature and stir. When Gelatin is dissolves, pour into your
favorite pan.

2. Refrigerate until firm about 3 hours.

3. Place on top of your yogurt and add mint if you like

Yuzu Sushi with Tofu Wrap

For sushi rice (A)

Ingredients:

1 1/2 cup Japanese rice

1 2/3 cup water

3 Tbsp vinegar*

1 1/2 Tbsp sugar*

1/2 tsp salt*

1 tsp Yuzu Juice

* Alternative would be Sushi vinegar (ready use)

 

Steps for cooking Aburaage (fried tofu around rice ball)

6 Abura-age (fried tofu)

1 cup Dashi soup stock*

2 1/2 Tbsp sugar

2 Tbsp mirin (Rice Wine)

2 Tbsp soy sauce

 

Steps for sushi:

1. Start cooking rice. While cooking rice, put Aburaage into
boiling water for a moment to remove the excess oil. Drain
and dry with paper towels. Cut the Aburaage in halves so that
each piece has an open end. Put Dashi soup stock, sugar,
mirin, and soy sauce in a pan and bring to a boil.

2. Add Aburaage in the pan and lower the heat. Put a lid and
simmer until the liquid is almost gone. Stop the heat and let
them cool for a while.

3. Prepare sushi rice. Mix (A) in the sushi rice. Wet your
hands and make small mounds of sushi rice. Take a piece of
Aburaage and lightly press to remove the excess liquid. Open
the pouch and stuff a mound of sushi rice inside. Fold in the
open side to close the pouch.

Yuzu Tartar Sauce (with capers)

Ingredients:

1 cup mayonnaise

2 tbsp Yuzu Juice

1 tbsp capers

1 tbsp minced onion

Salt and pepper to season

 

Steps:

Add all ingredients, mix well

* This Yuzu Tartar sauce is great with fish
